Going back to school is a real busy time for families as they settle back into a routine after a long time off.
There is homework to be done, tests to study for, after school activities to be carted around to. For the parents it means writing about one million checks for this and that, scrambling around to get school supplies, filling out hundreds of school forms and carting kids around from one activity to the next. My goodness we have all done this before, why is it always such a shock on the system to get back in the groove?
The last thing you want to worry when the kids go back to school is snacks, packed lunches and dinners when you come home tired from work or just had a long hard day with all the kids at home, so that is where I come in. My next couple of posts will be offering some simple, healthy and easy after school snacks and dinners to get your family back into gear after a restful summer.
So I was off to Bam’s Test Kitchen to start to find some solutions for some easy and healthy snacks. A recent project of mine has left me with a great deal of delicious and healthy figs in my pantry and I was determined to create a recipe using my figs. I first tried making truffles with figs with Rice Krispies. Chewy and crunchy on inside but lacked what I was looking for on the outside. So then I began experimenting with figs and cocoa and I came up with the perfect combo- Chocolate Figgy Truffles.
With a little planning and not even turning on an oven, you can make some delicious healthy snacks that your whole family will enjoy. Chocolate Figgy Truffles are a great energy booster snack to help tie over the kids until dinner is on the table. You can make them ahead and they store great in the refrigerator or freezer and are highly portable to take along to all of your after school activities.
They are made with no refined sugars, gluten-free, egg free and are lactose free. Chocolate Figgy Truffles are made with all natural figs, dates, almonds and unsweetened cocoa powder. These truffles are chewy and delicately sweet. The decadent chocolate flavor grabs your senses. Chocolate Figgy Truffles
Makes Approximately 30 truffles
- 1/2 C dried Figs
- 1/2 cup dried pitted dates
- 3/4 cup ground almonds (I used crushed almonds for my truffles as I was pounding them by hand but for a smoother consistency finely ground almonds would be best)
- 1 tsp vanilla
- ½ teaspoon orange zest (optional)
- Pinch sea salt (helps intensify the flavors but if watching your sodium intake then leave out)
- 3 tbsp unsweetened cocoa powder
- Optional items for dusting your fig truffles (unsweetened cocoa powder, toasted coconut, crushed toasted almonds, toasted white sesame seeds)
Step 1: Soak dried figs in hot water for approximately 30 minutes to 1 hour just until slightly softened. Drain water and set aside.
Step 2: In a food processor or with a sharp knife pulse or chop together the dates and figs until they are very smooth with no large chunks or fruit.
Step 3: If using a food processor, add the ground almonds, vanilla, sea salt and unsweetened cocoa powder and mix until well blended. If you do not have a food processor, place the chopped fig and date mixture into a bowl and mix in the ground almonds, vanilla, sea salt and unsweetened cocoa powder manually until well mixed. (Now here is the part where you can get creative as a lot of flavors go well with chocolate like orange zest, dried cherries, so add what you and your kids like)
Step 4: Take approximately 1 teaspoon of the Chocolate fig mixture in your hands and roll into a ball. Continue this process for the rest of the mixture.
Step 5: Roll the balls into unsweetened cocoa powder, crushed almonds, sesame seeds or even toasted coconut to make a yummy treat. You can even dip your balls into melted 70% chocolate for a decadent treat. Refrigerate balls for at least 15 minutes until set.
Step 6: Enjoy these healthy and delicious Chocolate Figgy Truffles as a healthy snack or a decadent ending to your perfect meal. These store best in the refrigerator up to a week or frozen for up to 3 months (yeah right like they would last that long with a household of hungry teenagers… LOL) Chocolate Figgy Truffles are gluten free, lactose free, sugar free, egg free and vegan friendly.
