I have decided to stop wearing black, gray and dismal colors from this point forward.
Have you ever noticed how people’s reaction change when they speak with someone who is wearing light and bright colors verses dark and drab colors? It brings a smile to their face. It is like a glimmer of sunshine. It is time to shed the depressing months of winter and move on to some delightful happy bright and fun experiences.
The flowers are blooming and spring in the air. This week was Hong Kong’s Flower show and amazing sites for all to see. I much rather go to the beautiful flower show than deal with all the drunken crazy people as the Hong Kong Sevens any day, but that was going on as well.
I was so going to wear this very same outfit but I was stuck on what shoes to pair with my attire.
I saw the sun for the first time here in Hong Kong in about 60 days so very excited to make something to celebrate the coming of spring. My dear neighbor came over bearing a huge car load of oranges from the USA and just seeing the bright orange colors laying on Bam’s Kitchen counter, brightened my day. I wanted to make something that could help us all jump into spring with some very fresh flavors and healthy alternatives for desserts. After all, we are soon embarking upon bikini weather…
I ventured on the wild side by looking in Bam’s Kitchen pantry for some inspiration. I started thinking about all my adventures around the world, I have coconut milk from Thailand, sweet juicy oranges from Florida and whole Cardamon from India. Now this was much more like my style, a blend of cultures all combined in one lovely ice pop.
An ice pop, frozen ice lolly, Popsicle or frozen treats are popular in almost every culture we just have different nick names for this yummy frozen treat.
Orange Coconut cardamom ice lollies have the creamy richness of the coconut milk, light and fresh flavors of the oranges and some exotic flavors with the spice of the cardamom which make this ice lolly very unique and refreshing.
My ice lolly pop containers are made of bright orange, red, blue and green colors and are just ready to help us jump into spring. So go ahead and strip off those black and drab colors, don some bright and fun clothes, and grab yourself a cool and refreshing Orange Coconut cardamom Ice Lolly.
Orange Coconut Cardamom Ice Lollies
Makes between 12 and 16 ice lollies depending on the size of your containers.
- 1 tin of light coconut milk (240 grams or 1 cup)
- 3 large oranges (you can substitute 1 tin canned mandarin oranges or other citrus fruits available to you)
- 6 whole cardamom seeds or 1/4 teaspoon of ground cardamom (crush whole cardamom seeds with mortal and pestle and then outer shell removed and then continue to grind inner fruits/seeds of cardamom until very finely grated)
- 1/2 cup granulated sugar (I substituted Stevia or you can use agave nectar or whatever your little heart desires) I do not like my desserts too sweet, so please adjust sweetener to your liking and it also depends on how sweet your oranges are. FYI: bikini season is in about 8 short weeks….
- Ice lolly containers (you can also use paper dixie cups with popsicle sticks, or any small containers that you don’t mind putting in the freezer)
Step 1: Remove the peel and section the oranges. Set aside.
Step 2: Place coconut milk, oranges, ground cardamom and sugar into the blender. Blend until very smooth.
Step 3: Poor Orange CoconutCardamom cream into ice lolly containers and put in popsicle sticks.
Step 4: Freeze for about 8 hours. Run the ice lolly containers under water to loosen from container and remove ice lollies.
Step 5: Jump into spring by donning your flip-flops, putting on your sunnies, bask in the sun while enjoying a light and delicious Orange Coconut Cardamom Ice Lolly.
